About a year ago, a friend of mine found out that her son is allergic to gluten. At that time, many of us had no idea exactly what that meant. I had heard of egg, dairy, and peanut allergies, but gluten? Apparently, she has had to change her entire cooking and grocery shopping regime.
What on earth is gluten, anyway? Gluten is is a protein composite found in foods processed from wheat and related grain species, including barley and rye. It gives elasticity to dough, helping it to rise and to keep its shape, and often giving the final product a chewy texture*. So many of the breads, pastries, pastas, cookies, cakes, tortillas, crackers, cereals, oats and dressings that we know and love can actually harm those who are allergic.
Gluten-free diets have become increasingly popular, but it has got to be difficult to find foods and snacks that fall under this category. Breads, cookies, brownies and other baked goods are THINGS I NEED. Yes, NEED.
