5 Awesome Salads + The Everything Salad Superfood Recipe

The everything salad. It’s my go-to concoction whenever I need some veggies in my life. Normally, adding extra vegetables to food gets difficult, especially when it’s sweets that I really want! This salad is as delicious as it is pretty and is packed with the super foods you need for that extra boost. Enjoy!

 

The Everything Salad

Ingredients:

  • 2 cups diced spinach
  • 1 cup cooked quinoa
  • 1/2 cup tomatoes, cherry or diced
  • 1/2 cup cilantro
  • 1/2 cup diced avocado
  • 1/4 cup green onions
  • 1/4 cup shredded carrots
  • 1/4 cup almonds
  • 1/4 cup crumbled feta cheese
  • balsamic vinaigrette dressing
Wash and cut up all veggies, place them in a large bowl and toss with desired amount of dressing. You could add almost any vegetable to this salad: bell peppers, mushrooms, broccoli, edamame, cucumber, the possibilities are endless! I use the balsamic vinaigrette dressing from Fresh and Easy, love it! You can always use your favorite or make your own. To make this salad a little lighter, you can use half the amounts of almonds and feta cheese.

Antipasto Salad – This quick Italian style salad uses olives, red onions, peppers and artichoke hearts and gets a home made vinaigrette splash.

 

BLT Salad – Um, because there’s bacon in it! I love a BLT sandwich, so this healthier version works for me!

 

Watermelon and Tomato Salad – I am lucky enough to still have watermelons available in my area, this is a favorite year round. Basil and feta set this dish off proper!

 

Guacamole Salad – This one is made of everything you use when making delicious guacamole! Just don’t smash the avocado :)
